What stall speed?

Going to be sending my converter to Phil for a rebuild - billet input broke off inside. Was curious what stall speed would be best suited for my needs. The truck is an 07, street/ daily application. Has gone 10.94. I run a fleece s468 with 87 turbine. Anyhow, I don't want to go too loose or too tight. I still daily it, take road trips, drive all around so I want decent fuel economy. Should I just stick with stock stall? Some are saying 3300 stall but that seems wayyy loose for my application? I'm not sure. Need a little advice.
