I wouldn't trust it unless you hook another guage on and verify it. If it is running cool that's great but based on what I've seen them run and what others report something isn't right.

We use a 6.7 to haul my pulling truck. Even on the mild tune you have to manually down shift to keep egt under 1200 on a small hill. This is stock injectors and stock Turbo.
Empty on the hot tune at wot it will hit 1700. There is no way the temp should differ this much from your truck to ours with practically the same setup. I would be double checking your temps

The problem is location. Remove the probe from the back plate and drill the manifold before the turbo. The drive pressure makes the temps extremely hotter. If you was to remove the stock charger and let it breathe (T4, 66) you will save your engine. Keep going the way you are and you will figure out the hard way.
