Electrics Fans

Have a couple questions about electric fans on a dedicated puller. No a/c, no street use.
If i bought a set of LS1 fans, would i just cut and splice a on/off switch into the wiring? And if that would work, what about controlling the speed of the fans?
We would be fine with no variable speed option, just a full tilt or off kinda thing, but what have you guys done with your puller?

I put my on a relay. A lot of switchs can't handle the amp the fans draw. So run a switch to the relay for on/off and the power supply to the fans just goes through the 40amp relay. I don't see a need for different speeds.

So if you wire it like that, it will be @ full speed?

Our set is just wired to a switch. When switched on they are at full speed.
