Awesome work, I like the thread a lot. I just wanted to let you know that it does effect the spring rate. It makes the springs stiffer.
Here's the equation for spring rate:
Spring rate = k = (mod of rigidity of material*(wire diameter^4))/(8*number of coils*(outer diameter of coil - wire diameter)^3)
So the simplified version of this is a single coil takes, say 100 lbs to compress 1". If you put another coil on top of it, it only takes 50 lbs because they're both only compressing .5" each.
I believe 2nd gen stock coil springs have six active coils, so removing one of those increases your spring rate ~20%. The reason it handles better is because stiffer spring rates handle cornering better at the sacrifice of comfort. You also lowered your CG (Center of Gravity) of the truck which helps.
