they are using a hilborn or enderle style nozzle. Usually two or three of the big ones in each intake port, with a high pressure waterman pump to move the fuel. Metering is controlled by a valve off of the throttle controll just like any other alky injected engine, and is tuned by pill size to fatten or lean the engine up depending on air conditions and altitude.
 
The vavle off the throttle is called a barrelvalve.I used to run a Hillborn alki set up on my 500ci minirod very easy to set up.
