Wiring harness diet

So i got a 94 dodge 2.5 pulling truck. Im in the process of finishing up my motor build and i was looking at my harness and thinking about some of the unnecessary wires there. Basically just want to eliminate un needed wires to clean it up. How should i go about this? Pull the whole harness out, pull the loom off and trace the wires that aren't needed? This is a strictly pulling truck. Thanks in advance.

Ive hacked away at mine for years trying to trim it down. Finally gutted it and starting from scratch. I haven't finished yet but I am already happy with my decision.

I would love to do that but although I'm not sure what my time frame is and don't wanna rush wiring. I'm sure in the end, cutting the original harness will be Just as time consuming as starting from scratch.
