Need Advice Turbo/Injectors

My truck is listed in the signature. It runs great and get about 17-mpg on the road. I am working on finding a combinations of Turbo/Injectors that will still allow me to tow and get decent mpg on now towing. I would like to make around 500-hp and still have a truck with great street manners. Any suggestions would be greatly appreciated. I have talked with Industrial and Elite as well as DJ who has done the work on my truck and I seem to get more confused. My goal is 500 hp or close without hight egt's.
 
190's

Won't 190s with a VGT SS Smoke all the time and give me higher EGT's? Or will the VGT SS clean up the 190's? I also have been told that you can and you can't tow with the VGT SS depends on what company I am talking to.
