We always run Omega brand, 1/4" if the port size allows, otherwise 3/16". I wouldn't recommend running 1/8" in the exhaust manifold. If you're running a Data logger that allows an E type, I suggest that for a better resolution at lower temps.

And where the hell do you find a 3/16" NPT tap!?

I see your point though, hard to trust 27 TPI.
 
Anyone got a part number for the spacer? I can get the zip ties. frieghtliner parts guys don't know anything about the cylinder spacer

Yes, that's the thermocouple diameter. I wouldn't try to run a 1/4" thermocouple with a bore through 1/8 NPT fitting, getting kind of thin. Bump up to a 1/4" NPT compression fitting with a 1/4" probe.

Are you using that platform for a converter / driver to the gauges? Or doing all digital read out? I have no idea what the capabilities of those boards are.

Like how dipped? If you dig around, you can find shields pre-assembled with Pyro drivers and code (sketches) available.
Then it will come down to how you present your information.
